Thai Meatballs

The super bowl is tied to so many memories from my childhood. Growing up, the super bowl was the day of chili eating, super bowl party hopping, and family time…oh and football! Chili is mandatory every year, but I always like to add a new and different addition to the menu. This year I made a bite size Thai meatball that will be a big winner in your home!

Thai Meatballs

1/3 C. Sugar
1 Tbs. Miso
1 Tbs. Soy Sauce
1 Tbs. Rice Vinegar
1 1/2 tsp. Sesame Oil
Mix together
Add:
2 lbs of ground beef

4 Scallions, finely diced
3 Cloves Garlic, finely diced
1 Inch Ginger, finely diced
1 Tbs. Ground Corrainder
1/2 C. Matzoh Meal or Bread Crumbs
1 Egg
Make into balls and sprinkle with sesame seeds.  Roll into Bake at 350 for 15-20 min

Peanut Butter Sauce

1 13.5 Oz Can of Coconut Milk
1 Tbs. Sriracha
¾ C. Natural Unsweetened Peanut Butter, creamy or chunky
¼ C. Honey
2 Tbs. Mirin or Rice Vinegar
¼ C. Water, more or less depending on consistency
Put all ingredients into a medium pot and bring to a very gentle boil over medium heat, whisking constantly.  Let the mixture simmer for 3-5 minutes over low heat.  Let sauce rest till cool and serve with meatballs.
